I LOVE every bite of this moist Banana Coffee Cake. When I take a bite it takes me back to that good old times when I used to visit my Grandma's during the weekends and she would bring us this moist old-fashioned coffee cake. Full of flavors, full of magic and most importantly full of love.

When there is a bunch of Overripe Bananas staring at you with sad little eyes from a distance, then don't feel sad. Rather, get ready to bake Banana Coffee Cake. You see when you put on your baking hat and grab that beater you can actually create magic!

There are times when we look for everything fresh for a recipe. But, when we are working with our fruity friend - Bananas, we rather have them ripe, brown, dark and ugly. Trust me, the riper the Bananas the better the cake. Below you'll see how these sad little bananas turn out to be the superstar of this recipe!

The thing with this cake is that you'll be confused about whether to serve it for dessert or for breakfast. I guess that's the thing with all banana desserts. They are just so great.

So, Let's Make Banana Coffee Cake At Home

Let's get begin with our creamy, calorie-rich friend called - butter. Take it out of the fridge and melt it in the oven. Once our butter is soft, smooth, and melty at room-temperature we'll add some brown sugar in it.

Ok, Folks! Now is the time to grab our hand mixer or stand mixer and put on our baking hats. Woohooo, Let's get baking!

Use the mixer to beat sugar and butter until they are light, fluffy and creamy. I love this part. I use a hand-mixer. So switch on the power and let's go round and round around the bowl. Let's sing a song while we do it.

Now, let's throw in some yogurt & vinegar into our batter. Let the Yogurt incorporate more air and bring in more fluffiness into our cake batter. In case you do not want to use yogurt & vinegar you can replace this with one egg. Just one egg will work fine for this recipe.

Tip: The replacement for Egg is Yogurt & Vinegar. It works perfectly fine!

Now's the time to bring in a drop of my favorite little baking queen - Vanilla Essence. Let us welcome Vanilla Essence in our cake batter to make it tasty and fragrant. Honestly, I love the smell of Vanilla Essence. I know what you're thinking! Seriously who doesn't love the aroma of Vanilla 🙂 Ah!

Time for the superhero of today's recipe - Overirpe Mashed Bananas. APPLAUSE EVERYBODY!

Tip: If you do not have overripe bananas, and you are still craving for this Banana Coffee Cake, just put your Banana in the oven and microwave at full power for 2 minutes. Cool it down before you peel it.

Let's mix this mashed banana with our other ingredients and there you go. You have your wet ingredients.

The prime reason for using overripe Bananas is simple. The riper your banana, the more intense are the flavors!

In another bowl let's mix our big old daddy of Baking - All-Purpose flour with the two inseparable baking buddies - Baking Soda and Baking Powder. This is the bowl of our dry ingredients.

Once our dry ingredients are ready we'll add them into our wet ingredients and lightly fold them until they are well combined. At this point your Banana Coffee Cake Batter is ready.

But, what's a coffee cake if you don't have some crumble topping into it. Right? So, today we will make a simple Cinnamon Crumb Topping.

How to Make the Streusel

To make this delicious crumb topping we will mix butter, powdered cinnamon, walnut, brown sugar, and flour. Let's use our hand-held mixture to make our crumb topping.

For Streusel the basic ingredients that go in place are butter, cinnamon, brown sugar, and flour. However, you can add Chocolate ChipsorCoconutorPecansinto the mix. All of the three are super flavorful and can make your Banana Coffee Cake turn out just right.

Once our crumb is ready. We are just gonna pour this all over our cake batter. And, that's it my friend. Your work is done.

I put the crumb twice. Once in between the cake and then on the top. Two layers of crumb add to the goodness of the Butter-Cinnamon Flavors which taste SOOO GOOD!

Now is the time to kiss goodbye to your Banana Crumb Cake for another 25-30 minutes so that it gets baked in a pre-heated oven at 350F and Let's you enjoy all of that Banana goodness and the fruits of your hard work.

I would recommend you to bake for 25 minutes. After that, check by inserting a toothpick at the center of the cake. If it comes out clean, you are good to go. If not, increase your time by 3 minutes. And, Check again! For my cake, it took me 27-minutes approximately. I had used a 7" cake tin. The time of baking depends on the cake tin and the oven as well.

By the time your banana bread coffee cake is getting ready, you can sit back and watch an episode of Friends or just play some cool music and dance like a mad little kid. Sometimes it's important that we look stupid. I do that all the time. It makes me keep my child-like excitement alive.

INGREDIENTS

Wet Ingredients

  • ¼ Cup Butter Melted
  • ½ Cup Brown Sugar
  • ¼ Cup Thick Yogurt
  • ½ teaspoon Vinegar
  • 1 teaspoon Vanilla Essence
  • 2 Qts Ripe Bananas Mashed

Dry Ingredients

  • ½ teaspoon Baking Soda
  • ½ teaspoon Baking Powder
  • â…” Cup AP Flour
  • 1 tablespoon Cinnamon

Streusal

  • ½ Cup Brown Sugar
  • ½ Cup Butter
  • ¼ Cup AP Flour
  • 1 teaspoon Cinnamon
  • ¼ Cup Walnut chopped

INSTRUCTIONS

  • Pre-heat oven to 350F and line a 7" Cake Tin with parchment paper

  • Beat Butter and Sugar until light and fluffy with a stand-mixer or hand-held mixer. Add Yogurt, vinegar, vanilla essence and mashed bananas. Mix well.

  • In a separate medium-sized bowl mix sifted AP Flour, Baking Soda, Baking Powder and lightly fold them into your wet ingredients.

  • Make the streusel by mixing the flour, butter, brown sugar, walnut, and Cinnamon until crumbly.

  • Pour half of the cake batter into the lined cake tin, top with some streusel and then repeat.

  • Bake for 25-30 minutes at 350F or 180 C or until a toothpick inserted in the center comes out clean

Notes

  • We can replace the Yogurt with sour cream in equal quantity.
  • If using Egg, then donot use Yogurt & Vinegar. Just replace it with 1 whole Egg.
  • For streusel I have used Walnuts. You can relace it with Pecans, Chocolate Chips or Toasted Coconuts
  • In case your Bananas are not ripe, pop them in the oven for 2 minutes to get it black from outside and full of flavors from inside.
