This recipe is made in just a few minutes and uses a few ingredients: cherry tomatoes, olive oil, salt, pepper, garlic, and a little butter.

Heat a large pan on the stove on medium heat.

Add cherry tomatoes, olive oil, salt, pepper, and crushed red pepper.

Stir regularly for about 3 minutes, until cherry tomatoes begin to soften and wrinkle.

Add garlic and reduce heat to medium-low.

Stir roasted cherry tomatoes with garlic for 30-60 seconds.

Add garlic and butter.

Turn heat down to medium-low and stir roasted cherry tomatoes with garlic for 30-60 seconds.

Remove from heat before garlic burns.

Sprinkle with basil and serve.

Fresh, crisp cherry tomatoes are best. However, if your raw cherry tomatoes are wrinkled, but not extremely mushy, then yes, you can roast them. Roasting wrinkled cherry tomatoes is a great way to use over-ripe tomatoes before they go bad.

Which herbs taste good with this roasted cherry tomato dish?

Experiment with them all! In my experience, all fresh, fragrant green herbs compliment roasted cherry tomatoes and garlic. This recipe uses fresh basil as a garnish, but parsley, rosemary, and tarragon are also fantastic options.

Is there a difference between roasting cherry vs grape tomatoes?

Cherry and grape tomatoes are similar in size, yet have slight differences. Grape tomatoes have a thicker skin and may take an extra minute or two to roast on the stove. Grape tomatoes are a little less sweet as well.

Regardless of minor differences, roasting cherry and grape tomatoes is very similar. This recipe will work for both.
