Best Instant Pot Carrots

My recipe for candied carrots uses whole carrots with a glaze of maple syrup, green onions, and brown sugar.

The simple ingredients in this recipe come together to give the carrots so much flavor. Maple syrup, brown sugar, and green onions pair together deliciously in a glaze. In fact, it’s the same glaze I use for my Instant Pot Ham!

This is easily one of my favorite side dishes to serve for the holiday season. I love to pair these carrots with Air Fryer Ham. Candied carrots with maple syrup paired with the kick of sriracha from the ham is perfection!

These glazed carrots are just so delicious, my family and guests always want extra! Since they take hardly any time to make, I usually whip up a second batch.

Can you use baby carrots in this recipe?

You can substitute baby carrots for regular carrots. They work really well on this recipe.

Can glazed carrots be made ahead of time?

You can make them up to 3 days ahead of time. Glazed carrots will last about 5 days in the refrigerator when stored properly in an air-tight container.

How to Make Candied Carrots

  1. Stir maple syrup, brown sugar, and sliced green onions together in a bowl until thoroughly mixed together.

  2. Slice the stems off of your carrots, and then peel them. You can also use whole carrots that have already had the tops cut off.

  3. Place carrots at the bottom of your Instant Pot, then cover with the glaze mixture.

  4. Cook on high pressure for 4 minutes. When 4 minutes is up, release the pressure, serve, and enjoy!
