While I’m determined to stay keto during the holidays this year, I’m also determined not to miss out on my favorite Thanksgiving and Christmas dishes! That includes making this delicious keto green bean casserole that’s low-carb and high in taste. It’s one of our most requested keto family recipes around here!

The holidays are around the corner and for those of us trying to keep to a low-carb lifestyle, the eating holidays can be a little scary.

But not anymore!

I’ve been working out my keto Thanksgiving menu over the last few weeks and am *almost* there with a meal full of favorite keto family recipes.

What is the Keto Diet?

Eating a keto diet means you focus on keeping your net carb counts low. It’s similar to the Atkins 40 diet, but a little more strict when it comes to total carb counts.

Atkins: you can drink milk. Keto: you want to avoid it and choose almond milk due to the carb count.

That’s the kind of difference you’ll find.

Keto Green Bean Casserole Ingredients

  • 2 cupsfrozen green beans
  • 1/2 cup chopped white onion
  • 4 cloves minced garlic
  • 2 tbsp butter
  • 1/4 cup heavy whipping cream
  • 1/2 cup chicken stock
  • 1/2 cup mushrooms
  • 1/2 tsp Xantham Gum
  • 1/2 tsp Salt
  • 1/2 tsp pepper
  • 1 oz Pork Rinds

Keto Green Bean Casserole Directions

1. Thaw frozen green beans in the microwave for a few minutes. 4-5 should do it! Snap the ends off fresh green beans and boil them if you choose to go that route.

2. Chop white onion, garlic, and mushroom.

3. Add to a saucepan with butter and cook mushrooms well.

4. Add the cream and chicken stock and bring to a boil.

5. Once boiling turn down to simmer and allow to simmer for 10-15 minutes.

6. Add xanthan gum and stir until sauce is thick.

7. Add green beans to the cream sauce and coat thoroughly.

8. Put green beans into a casserole dish, and top with crumbled pork rinds.

9. Place in 350-degree oven for ten minutes. Broil for two minutes but be VERY careful as the pork rinds will burn quickly. (Ask me how I know! But they also pick off easily if you do so.)

10. Serve warm and enjoy!
