I’m finishing off the week on a sweet (and spicy) note with this super easy chocolate mousse inspired by Hervé This. This is a French molecular chemist who came up with an innovative way of making chocolate mousse with just two ingredients: chocolate and water.Most people would agree that chocolate and water don’t mix and normally, they don’t. But when you add a bit of heavy whisking into the mixture, the molecules rearrange themselves and you end up with a super smooth mousse that actually sets into something luxuriously delicious.
If you’re looking for something quick, easy and super chocolatey, this is the mousse for you. If you’re not into spice, you can feel free to leave it out, but I think it added a little extra something. This mousse comes together super quick and it’s very forgiving. If the mixture seizes up on you or becomes to grainy, you can always go ahead and re-melt it on your double boiler. I felt like it was best right after whipping, but it will keep in the fridge as well – it just thickens up a bit. It’s super smooth and melty in your mouth. What more could you want?!
Spicy Dark Chocolate Mousse Recipe inspired byHervé This via Food 52
serves 4-6 depending on serving size
- 3/4 cup water
- 8 ounces chocolate (I used 70% bittersweet), roughly chopped
- 1 teaspoon Tabasco
- a bowl of ice cubes with a bit of cold water
- mint, to garnish
Combine the chocolate and water in a glass bowl and set over a simmering pot. Or, you could use a double boiler. Stir until the chocolate and water are smooth.
When smooth, move the bowl to your prepared bowl of ice water. Add the tabasco and whisk, either by hand or using an electric mixer. When the mixture thickens (it will start to look a little like chocolate cake batter and you will see whisk lines in the chocolate) immediately spoon into 4-6 small bowls. Refrigerate or enjoy immediately with fresh mint.
Note: If you mixture seizes up or gets grainy, simply reheat until smooth and whisk again.

Omg, I love the mousse recipe you based this off of. HOWEVER, the last time I made it, my arm was sore lol lol. Shoulda used a stand mixer for whisking I guess.

Not a huge fan of this recipe to be honest. It’s just not as good as ‘traditional’ chocolate mousse made with whipped egg whites. Without any cream, vanilla extract or egg whites this recipe is just too dense and way too bitter.
Maybe something went wrong, I dunno. But I thought it was just not very satisfying.

Spicy chocolate is one of my favorite flavor combinations. This sounds good and simple, which is what I like, especially in the summer. I don’t know that I will be able to handle 70% bittersweet chocolate, so I may have to mix up the chocolate a bit.
