  2. What if you’re REALLY craving thin mints during the off season?

This homemade thin mint cookie recipe to the rescue, of course!

I am definitely not the first person to think of this idea.

I’ve seen TOTALLY homemade thin mints, but helllooo we’re Show Me the Yummy: Easy Recipes for Yummy Food, so today, we’re going the semi-homemade route.

I’m also not the first person to think of this semi-homemade idea either, but today, what I’ve done is given you options. You can use:

  • Different kinds of chocolate – dark, semi-sweet, milk, and even Andes Mints have been tested
  • Different bases – Ritz, Oreos, and Nilla Wafers have also been tested

Let’s just say, you can’t go wrong. 😉

Whichever way you choose, you’re two-four ingredients and five minutes away from the BEST the EASIEST thin mint cookie recipe.

Thin mint cookie recipe ingredients:

  • Baker’s baking chocolate bar – can use semi-sweet, german chocolate, or milk chocolate
    • This melts really well, so I’d highly recommend using
  • Canola or coconut oil
    • This makes the chocolate really smooth and melty
  • Peppermint extract
    • You can also use mint extract, which I really like, but a lot of people think it tastes like toothpaste, ha!
  • Ritz, Nilla Wafers, or Oreo Thins

Homemade thin mints with andes:

Want to make this recipe even easier? Ditch the chocolate, oil, and peppermint extract and use Andes mints instead!

All you do is melt the Andes mints in the microwave until smooth, then dunk in each cookie/cracker until fully coated.

Copycat girl scout thin mint cookie recipe with ritz crackers, oreo thins, or nilla wafers:

  • Line a rimmed baking sheet with a silicone baking mat or parchment paper. Set aside.
  • Melt chocolate
    • Place chopped baker’s chocolate into a microwave safe bowl with oil.
    • Melt in 30 second increments, stirring after each increment until completely melted and smooth.
    • Stir in peppermint extract.

OR

  • Melt Andes mints
    • Remove wrappers from andes mins and place into a microwave safe bowl.
    • Melt in 30 second increments, stirring after each increment until completely melted and smooth.
      • I only needed 30 seconds.
  • Working with one at a time, use a spoon to gently dip each Ritz cracker, Oreo Thin, or Nilla Wafer completely into melted chocolate (or melted Andes) then use a fork to lift it out.
  • Tap the fork gently on the side of the bowl to allow excess chocolate to drip off.
  • Place cracker/cookie onto prepared baking sheet.
  • Repeat with remaining crackers/cookies.
  • Place the baking sheet into the freezer until the chocolate has hardened, about 20-30 minutes.
  • Enjoy immediately or store leftovers in an airtight container in the fridge or freezer!

  • Baker’s Chocolate vs Andes Mints
    • Baker’s chocolate –nice because you can control the sweetness and peppermint levels.
      • If you like dark chocolate vs semi-sweet vs milk, more peppermint-y vs less peppermint-y – you have TOTAL control.
    • Andes mints – this was our favorite.
      • The chocolate is SO good, sweet, and creamy, and the mint flavor is spot on. Plus, this makes the recipe even easier.
  • Ritz Crackers vs Nilla Wafers vsOreo Thins
    • Ritz – Trevor’s favorite and probably the closest texture to the girl scouts thin mints.
      • Some people are weirded out by the sweet salty combo, but we thought these were PERFECT.
    • Nilla Wafers – Trevor’s least favorite. He thought they were too airy.
      • That being said, I still liked them, although they weren’t my favorite. If you really love Nilla Wafers though, you’d love these.
    • Oreo Thins – winner for most decadent. Although the texture isn’t as close as the Ritz, the extra chocolate flavor and crunch is really nice.
      • Definitely use the Oreo Thins vs “regular” Oreos for best texture and flavor.

Thin Mints with Baker's Baking Chocolate Bar

  • 1 (4 oz) Baker's Baking Chocolate Bar you can use semi sweet bakers bar (56%), german chocolate, milk chocolate, etc.*
  • 1/2 teaspoon canola oil or coconut oil
  • 1/2 - 1 teaspoon peppermint extract start with 1/2 teaspoon and add more to taste, if desired
  • 15 crackers or cookies I’ve tried Ritz, Nilla Wafers, and Oreo Thins - you can also use a combination of all three

Thin Mints with Andes Mints

  • 1 (4.67 oz) package andes mints or 28 Andes Mints, wrappers removed
  • 18 crackers or cookies I’ve tried Ritz, Nilla Wafers, and Oreo Thins - you can also use a combination of all three

Instructions

  • Roughly chop baker’s chocolate on a clean work surface.

  • Place chopped baker's chocolate into a microwave safe bowl with canola or coconut oil.

  • Melt in 30 second increments, stirring after each increment until completely melted and smooth.

  • Remove from microwave, then stir in peppermint extract. Taste and add more peppermint, if desired.

  • Working with one at a time, use a spoon to gently dip each Ritz cracker, Oreo Thin, or Nilla Wafer completely into melted chocolate then use a fork to lift it out.

  • Tap the fork gently on the side of the bowl to allow excess chocolate to drip off.

  • Place cracker/cookie onto prepared baking sheet.

*Baker’s chocolate melts really nicely - better than a lot of chocolate chips - so I’d recommend using this kind of chocolate.

I LOVE making both the chocolate and andes versions with all the cracker/cookie options when I make these for a fun variety, but feel free to just use one kind of chocolate or cracker/cookie if desired.

Our favorite combo: Andes Mints and Ritz crackers.

These recipes can EASILY be doubled, tripled, etc.
